    For mass:

    175g unsalted butter in
    room temperature
    175g demerara sugar
    3 eggs, pre-cooked
    3 tablespoons of sugar syrup *
    40g almond flour
    175g of baking flour
    a pinch of salt
    40g of cocoa powder

    To the roof:

    225g bitter chocolate cut into small pieces
    55g brown sugar
    225g unsalted butter
    5 tablespoons milk
    1/2 teaspoon vanilla extract

    * Make the sugar syrup: in a small saucepan with a low heat, 50 g of demerara sugar with 50 ml of water. When it boils, turn off the heat and allow to cool.

    Preheat oven to 180 degrees. Grease a large cake shape, or if you have, two small 18cm.Start with the topping: place all the ingredients in a heavy bottom pan and bring to low heat, stirring constantly, until melted. Transfer to a bowl and let cool off the refrigerator.

    For the cake: Beat the sugar with the butter until the mixture is clear and fluffy. Gradually add the eggs without knocking. To the hand, add the almond flour, the sugar syrup and mix. In a large bowl, sift flour, salt and cocoa powder. now add this dry blend of Log in to see linksflour in the egg mass and butter. Mix gently with a wooden spoon. If necessary add a little water to help the mixture. Put the dough into cake form and bake for about 40 minutes.Let the cake cool in the form 5 minutes before uncapping it and let it cool completely before spreading the lid. If you do it in two small ways, spread the topping on top of one of the cakes, place the other on top, like a sandwich and then cover it all with the rest of the topping.
